What some of you may not know about me, is that I love to cook. I like cooking more than baking because with cooking, you can throw in a little bit of this, remove a little bit of that, test out a splash of whatever the hell - and still end up with a delicious dish. With baking, you have to follow the directions to a tee or your shit could honestly be a devastating waste of time and chocolate. I just say no to baking for the most part. (Although I do make a mean frozen puffed pastry dessert).
Anyways, back on topic. I've loved cooking now for about 8 years. Before I turned 21 I tore my ACL, meniscus and my MCL, so I was seriously out of commission. During that time and a heavy percocet prescription from my doctor, I had little to do but watch TV. I became obsessed with the Food Network. I like to call this a healthy addiction (see what I did there?)
I actually feel that I've learned a lot of techniques from simply watching that network for so many years, and I've incorporated some of those learnings into how I make food now.
Below is one of the simplest recipes you can make during this summer heat that will fill you up and not leave you lusting for more like some of the other "summer" aka skimpy meals out there might.
